Great restaurant, great experience, amazing food. Been there every time I go to Vegas. Went there for the first time by accident and was the best mistake I could have made. The appetizers are amazing. The portions are big and the Steak is just WOW!!!

What can I say... Never a bad meal at Botero. They had a special short rib ravioli appetizer that was too good to put into words.
Food was incredible--very imaginative and tasty. Cool room. Server was unbelievably bad--a slow night with maybe two other tables, and it took 30 mins to get drinks (after salads served). Still didn't diminish the great time.
What folks may not know is that Botero is open for lunch. It's one of my favorite places at Encore to have a nice midday meal. Lunch is served outside poolside. You are undercover with fans and comfy seating. This makes for some interesting people watching as you dine. I had a nice caprese salad to start. It was fresh cold and delicious. A perfectly cooked applewood smoked bacon burger with guyre cheese really hit the spot. The unexpected highlight was the Botero fries. OMG....as a frie aficionado I'm always on the lookout for fries done right or in a new interesting way. Botero serves fresh hand cut super crispy on the outside, moist on the inside French fries. I asked for a second serving and got it. They even make their own house ketchup and that made for the perfect accompaniment. Service was swift and polite. Can't wait to go back.

A fantastic Sticky Bun at breakfast. A variety of eclectic offerings. I only ate breakfast but would do so every day.
Botero is a solid steakhouse and probaby has the nicest room in the city. As the name would suggest, you'll find the artist's works everywhere, even the bathroom. It's a gorgeos space with exceptional food and service. I think my favorite thing about Botero is that while the food is very formal, the tiled floors make the room loud and its proximity to XS and the pool create a more lively setting than most steakhouses.
We had an exquisite dinner here when it first opened and were thoroughly pleased with quality and service. The dining room is opulent with high ceilings and a beautiful outdoor view. It was not packed when we were there, but I imagine it gets loud when it is.
We started with an assortment of fresh sushi cuts and a couple of premium cocktails suggested by the server. We ordered a bottle of wine and enjoyed the caprese salad and caesar salad. The petite filet and bone-in ribeye were cooked beautifully and went will with a side of wild mushrooms. In addition to steak, they have a respectable fish menu for those that are not big beef fans.
Dessert was whimsical - we tried the ice cream cupcakes and bon bon lollipops. Someone asked to take a picture since the presentation was so amusing. Perhaps an odd comment, but the toiletries in the lady's bathroom are amazing too! For a special night out where you like a bit of buzz, this is an excellent choice.
Botero steak is an interesting restaurant, if you are not an Art aficionado you may not appreciate all of the decor that surrounds you. But if you are only interested in what is going to be going down your gullet, then you've reached the right joint. The Kobe Beef Short Rib and Organic Roasted chicken were done to perfection and were some of the best food we have even eaten. The family style side dishes make for an interesting situation of having to decide which is best, while not ordering them all. The tater tots (off the menu now) and the truffle mac and cheese, were excellent choices and made for just the right "choose your own adventure" style dining.
On a service not, while making the dining reservation I mentioned my new wife and I would be in town for our honeymoon. Before a desert menu was brought over we were brought chocolate covered strawberries with "Congratulations" written in chocolate on the plate. A pretty perfect end to a great dinner.
Food and room out of this world! Derive much to be desired!
Walked in as a table of 2 on a Saturday night at about 8pm, was a 1.5 hour wait and well worth it. Really liked the layout of the restaurant. Food and Service were impressive. I had the scallops with polenta tortellini. Botero rates in my top 5 favourite meals in Vegas.
A truly upscale dining experience. Chef LoRusso is worthy of his many accolades. Inventive menu, with attentive service make for a great night out.
